I just got a lovely new bike (a Giant FCR3 Hybrid) and got a rear rack installed. I’ve never had one of these before–my old bike had a clip-on front basket. The guy at the bike shop recommended using bungee cords to fasten on a milk crate to the bike. I tried this, but I’m wondering if anyone has any suggestions for an “easy on-easy off” way to fasten the crate on, like my old basket that snapped on and off the basket mount, so that I can remove the crate and put it back on without having to futz around with the annoying bungee cords.

I truthfully think he gave you great advice. I can only give you advice on making it more secure, and that would be to use zip ties. Perhaps if you got ahold of some of the handlebar quick release brackets like they use on speedometers, etc., you could rig something up. But bungees are the way to go.
