After 6 LOOOONG months of not having gas at my apartment building they have finally fixed the pipes so that we can use our oven again! I need all recipes for baked goods, casseroles, and other delicious oveny things so that I can go home and celebrate having a functioning oven again properly.
To kick things off I am posting my Chocolate Chip Cookie Pie recipe. It is in a couple of other threads out there but it is the best pie ever and should be shared as often as possible.
2 eggs, beaten
1 cup sugar
1/2 cup flour
1 stick of margerine, melted
6-12 oz of chocolate chips (I use 12, but people who don’t feel like they need that much can use 6 oz instead.)
1 tsp vanilla
1 premade graham cracker pie crust
Beat the eggs and add each ingredient individually, mixing after each is added. Pour into unbaked pie shell and bake at 350 degrees for 30 minutes.
This is my huge Christmas office crowd-pleaser. I take it to everybody I know for a seasonal gift, too - but you can certainly make it in May.
Pumpkin Bread
1 can pumpkin puree (NOT “pumpkin pie mix”)
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Preheat oven to 350. Grease and flour three 7x3 inch loaf pans. I like to use the disposable ones. If you can’t find that exact size, don’t worry about it - just keep an eye on the oven. Mix pumpkin puree, eggs, oil, water and sugar. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. Bake for about 50 minutes (mine always takes longer) - go by the toothpick test.
It makes three loaves, it’s moist and wonderful and amazing, and you can keep one and give the other two away. Awesome win!
