Alton Brown's Filet O' Tofu

Man, did that suck. I followed the directions exactly as stated but it was horrible. It tasted like a big block of, umm, well, tofu. We threw it away and ordered pizza. Anyone else try it.

Yup. And I agree. That and his French Onion Apple-Juice (really. Yuk ) soup are the two recipes of his that are just disgusting.

FWIW, MOST of his stuff is fantastic but those two recipes? I can only assume he was on crack or something.

Yes, we watch all of his shows and did the brine Turkey for Thanksgiving and many others such as the meatloaf. All were good except that.

I love Good Eats, and unfortunately I just discovered it a month or so ago.

But we don’t have a stove… just a microwave and a toaster oven. (We’re remodeling.)

But if I had an oven, I’d be doing the bourbon/mustard/brown sugar/ginger snap glazed ham I saw him make a couple weeks ago.

Did you actually expect tofu to taste like anything but tofu (that is to say, like crap)?

Blech.

Alton said it was delicious so I figured, wtf, it’s Alton Brown, he would never lie.

Yet another culinary catastrophe averted by the SD…

Well I didn’t think it was half bad: it’s the one from his book? Or from the show?

We were also disappointed by this recipe. There are such things as flavorful tofu dishes, but this ain’t one of them.

On the bright side, his recipes for seared tuna steaks and mushrooms are excellent and very easy.

It was the one from the TV show. Tasted like tofu. If unflavored tofu appeals to someone, then it should be a hit. The only thing I can think of is to slice it thinner than he did on the show. Maybe very thinly sliced would not have been so, hmm, tofu tasting.

Freezing and thawing tofu really helps. Drains better and takes up sauce more readily.

(Also, make sure you are not using silken tofu for entrees. It’s strictly for pudding.)

Noper, it was firm tofu and I drained it for an hour as per the directions.

His brined turkey was awesome. I have been recruited to make the Christmas turkey because the Thanksgiving one came out so good.

I used the recipe in his book. Can’t remember the tofu episode. Was it a pan sear?

Dried, marinaded and then fried in 1/8" canola oil.
