Ok, so short story, probably read in a story collection in the 80s, very likely older than that.
Narrator is speaking to a reporter or historian relating past events about his uncle (father? I think probably uncle) who, it is clear from context, is revered by all of society for great contributions.
The contributions have to do with inventing time travel, then bringing back dinosaurs to present.
Chaos ensues (duh). Dinosaur is accidentally killed by laser and discovery inadvertently made that dinosaur tastes amazing*!
And that’s the twist. Uncle is revered not for time travel but culinary contribution.
