I got my order from Father’s Country Hams in the mail last night. For those of you who have never had a real cured ham, get yer butt over to that web page and order some. It’s sugar-cured, aged for at least 8 months, and smoked. The result is a deliciously salty, almost cheese like ham. It’s the kind of thing that you just can’t stop eating. Tonight, I’m making bread. Tomorrow, lunch will be a country ham and cheese sandwich on homemade bread. The cheese? Six year old cheddar from Wisconsin that a friend kindly brought me last week.
I don’t even need to check to the price list to know that it’s a luxury I can’t afford, but oh, something good to dream on. Imagine…a wonderful ham such as that delivered to your very door…surely you salivated as you signed for it. I have never had a ham like you describe but have no trouble believing it is as heavenly as you say. I look forward to Christmas all year because it usually means my most affluent sibling will splurge on a Honeybaked ham for the family gathering - not the same by a long shot, I’m sure, but the best I’ve been able to experience thus far. Two nights ago I had a “Carl Buddig sliced smoked beef” sandwich. I’m so sad and humiliated to say that that’s my closest encounter with salted meat in these poverty-tinged days. Pity me, please, just a little bit. (Oh, and pass the mayo.)

I’m in the east now but was in the southwest for almost a decade. It is green chile roasting time, and I miss it so. Is there an extra bag of chiles for other desperate party-goers to share?
