I’m cooking for one, but I like a tasty sauce to go with tilapia or salmon or catfish, which I usually cook with steamed or sauteed spinach. Any suggestions for an easy “one person sized” sauce? (Homemade or mix is fine, either one.)
It’s quick and easy though not particularly healthy–about 1 tsp yellow mustard, 2 tsp mayonnaise, and a drop of honey. Great on salmon. A little goes a long way.
I usually eat tilapia with pico de gallo and guacamole, as a fish taco.
Cajun seasoning and salt works well on both tilapia and catfish, no sauce needed.

mango salsa is great on tilapia
1 diced mango
1/4 cup diced red bell pepper
1 finely chopped green onion
2 tbsp chopped cilantro
2 tbsp lime juice
1 tbsp lemon juice
1 finely chopped fresh jalapeno or 1/4 tsp red pepper flakes (optional)
mix, cover, let sit at least 30 min
You can make a simple sauce in a hurry by sauteeing some minced onion or shallot, then adding some white wine and reducing it by about half, then adding some salt, butter and ground pepper.
Chimichurri is often used on steak, but IMHO is also fabulous on salmon.
I often brown the fish in the pan, remove it and deglaze with just a little white wine. Scrape up the brown bits while the wine reduces a little, then add butter and lime juice. Let the butter brown a little while the lime and wine reduce a little more, then pour over the fish filet. Just takes a minute or two. Yum.
This. It really doesn’t get any easier. I’d only add that you can throw in creme fraiche if you want, that the lime can wait till the endish (so the sourness doesn’t all evaporate during the cooking), that lemon works if you don’t have/want lime, and that you can grate a bit of zest into the sauce after it’s done cooking for extra-citrusy goodness.
