Anybody got any interesting snack recipes?

Tuesday night is Game Night at my place, and I usually try to come up with some sort of snack that’s different from the usual chips-n-dip. I used to make Rotel dip, then I tried out the Betelnet Peiju-Wu recipe I saw on the SDMB.

I don’t want anything totally freaky, like boiled squid eyes or anything like that, but something unusual yet still tasty. Any suggestions?

Fill those black olives with cream cheese!

Granita: (Italian, named I think for the grainy texture)
Lots of fruit, Sugar and a bit of water. Blend untill a slightly thick slurry. put into plastic container and put in freezer Now, every once in awhile go back to it and give it a scraping with a fork. scrape the frozen bits to the center. Do this half a dozen times and you get something that looks and tastes like a snocone on steroids. Garnish with whole fruits and a bit of creme fresh or whipped creme.

I know there will be better suggestions later, but easy it is!

Call out for pizza.

If real buffalo wings are too spicy and fatty for you (as they are for me), try making them this way:

2 pounds of wings, cut into thirds and the tip thirds discarded
salt & pepper
1/4 cup Frank’s red hot sauce
3/4 cup plain tomato sauce
1/4 cup melted butter
1 tablespoon soy sauce
1 tablespoon barbecue sauce
Couple of dashes of vinegar

Salt and pepper the wings and broil or grill them. Meanwhile, mix all the remaining ingredients in a big bowl. Toss the warm wings in the sauce mixture, and serve them with bleu cheese dressing and celery sticks on the side. Don’t forget enormous quantities of ice cold beer!

My sister brought something really easy to our Fourth of July celebration. She got a block of cream cheese and let it soften a bit, then spread it over the surface of a plate. Then she opened a can of salsa that had black beans and corn in it, and poured it over the top. Voila, really tasty dip for tortilla chips.

Gee, I never thought of that in the 10 million times we got together. :rolleyes:

Sorta like Cranky’s – spread a block of cream cheese in a baking dish, then spread over it a can of chili (it’s better with homemade chili if you have any sitting around), then a cup or so of shredded cheddar. Bake for a few minutes until bubbly – great with Fritos!

Also, the spinach dip on the back of Knorr’s vegetable soup mix is very tasty.

pretzels & m&m’s stirred together :wink: I had someone bring that over when I was having a midsummer’s eve chicks only party.

Or southwestern style pizza–press crescent-roll dough onto a cookie sheet that has been sprayed with cooking spray. Bake it for a few minutes, until it’s light brown and puffy. Spread with softened cream cheese. Top with shredded lettuce, chopped tomatoes, sliced black olives, taco-seasoned ground beef if you eat meat, and shredded cheese. Serve w/guacamole & sour cream.

Or 7-layer dip (can you tell I’m from Texas?):

  1. Spread a can or two of refried beans in the bottom of a large bowl or baking dish.
  2. Top with a layer of guacamole (2 or 3 avocados peeled & smushed together along with garlic, lemon juice, and a little splash of salsa).
  3. Top that with a layer of sour cream
  4. topped by chopped tomatoes
  5. topped by chopped green onions
  6. topped by 2 cups shredded cheddar or co-jack cheese
  7. topped and garnished with sliced black olives

Serve with warmed tortilla chips.

Mine’s sorta like CrankyAsAnOldMan’s and Gundy’s.

Soften a block of cream cheese and spread it on a nice plate. Top it with sweet jalapeño pepper jelly. Serve with Wheat Thins. It’s so tasty, it’s almost sick how tasty it is.

Veggies with the dip made from a container of sour cream and a pack of Lipton’s onion soup is a favorite around my house.

HOT CRAB DIP
Ingredients
½ pound (8 ounces) regular crabmeat
1 package (8 ounce) cream cheese, softened
1 – ¼ teaspoons Worcestershire sauce
½ teaspoon dry mustard
½ cup sour cream
1 tablespoon milk
2 tablespoons salad dressing or mayonnaise
¼ cup cheddar cheese, grated
1 tablespoon lemon juice
Pinch garlic salt; paprika for garnish
Instructions
Remove cartilage from crabmeat. In a large bowl, mix cream cheese, sour cream, salad dressing, lemon juice, Worcestershire sauce, mustard and garlic salt until smooth. Add enough milk to make mixture creamy. Stir in 2 tablespoons of grated cheese. Fold crabmeat into cream cheese mixture.
Pour into greased 1 quart casserole. Top with remaining cheese. Bake at 325° F until mixture is bubbly and browned on top, about 30 minutes.
Makes about 4 cups dip.

Yes, yes, YES!

That’s one of my favorites. And if jalepenos are too hot, find something called “Pickapeppa” in your local grocer’s hot sauce area. It’s very mild, and very tasty. Just a thin coating works fine.

I just got a kick out of seeing that the post recent poster to this thread was named Munch. :wink:

Is it just me, or is cream cheese the snack-food staple of the gods? Because here’s another one I just remembered:
1 block cream cheese
4 or 5 oz. smoked salmon
Several Tbs. fresh dill, minced
1 or 2 cloves crushed garlic
Lemon juice and salt & pepper to taste

Mix all those ingredients together and serve with crackers. There’s an excellent brand of slightly orange-flavored ones made by Partners that goes really well with that recipe. In fact, I think I got the recipe off the box.

A variation on the cream cheese phenom. Spread softened cream cheese on a flour tortilla, and top with pepper jelly, salsa, or whatev. Roll up and slice into little whirly discs. Yummy, and easy to eat!

I’ve forgotten what the recipe’s called but…

Buy some pitta breads and separate the two halves.
Mix some crushed garlic in with some butter. Spread the butter on the pitta bread. Sprinkle a healthy dose of grated parmesan cheese on the bread. Cut the bread into chip sized pieces and place on a baking tray.

Bake in a moderate oven until golden, then eat. YUM!!

Quesadillas

Required:
Flour or corn torillas (or if you are ambitious, try making authentic dough)
Shredded Monterey Jack (or Manchego)
Salsa
Oil or butter

Optional:
Cooked Chorizo
Refried Beans
Grilled and thinly sliced chicken/pork
Sauteed onions, bell peppers, or potatoe.
Chopped jalapeño or olives

Take one tortilla, add a thin (or thick, whatever you prefer) layer of cheese to one side, place meat/vegetables on top, or spread beans, then add cheese. Heat pan to medium, add oil or a chunk of butter, and place folded tortilla inside. Turn once, and repeat as necessary. Cut into 2-4 wedges (depending on size of tortilla), arrange on platter with salsa in the middle. Please do not add cream cheese to these. :slight_smile:

If your friends are more adventerous, I would also try hummus with pita bread with roasted eggplant/bell peppers/tomatoes and a nice chunk of feta cheese and a cucumber salad. Or lavash rolled sandwiches with nice lunchmeat, cheese, and vegetables. Good luck.

I know spinach dip has been mentioned, but here’s how I make it:

Take 2 cups of sour cream. Add one pack of Knorr vegetable soup mix, and one pack of Knorr onion soup mix (the small ones). Defrost one pack of frozen chopped spinach. Rinse under water and squeeze out the juice. Add to sour cream mixture.

Take a large pumpernickle (unsliced) and slice off the top. Slice out the bread and cut into bite-sized chunks, leaving a shell.

Put dip in pumpernickle. Cover with top of bread you cut off. Serve with the chunks of bread. Once the bread’s been eaten, cut up the loaf itself and serve that.

There’s also a fabulous hot spinach/cheese/garlic dip served with nacho chips that one of my favorite restaurants serves (I was just there today), but I’d have to find the recipe.

Instead of chips, make these (easy):

Combine 1 1/2 cups flour
1/2 cup cornmeal
1/2 teaspoon cornmeal
1/2 teaspoon sugar
1/2 teaspoon salt

Mix in with a fork 1 stick butter till crumbly.

Add 8 oz. sharp cheddar (shredded)
2 tablespoons white vinegar
2/3 cup water
Stir till it is all a soft dough.

Chill 1 hour

Preheat oven to 375.

Roll out dough (in pieces) to a thin circle (really thin and abount 10 inches diameter). Cut into pizza slices, sprinkle with black pepper (press in the pepper).

Bake 10 minutes. It will take you 4 or 5 times to use all the dough.

This is much easier than it sounds, and it is great stull. Serve with salsa.
