Apples, vegetarians and gall stones.

In this straight dope classic Cecil states that pectin depletes the body’s reserves of bile salts, and thus cholesterol reserves.

Now I seem to recall from my physiology class that a theory of gallstone creation is when an unbalance of cholesterol causes the percipitation of gallstones out of bile fluid.

Is there a higher incedence of gallstones in vegetarians? Vegans? People who just plain eat alot of apples, carrots and potatos?

Most studies have found that vegetarians are less prone to gallstones.

On the other hand, other studies have found that vegetarians with a high-fat diet were more slightly more likely to develop gallstones than the median. (You really have to work at finding a high-fat veggie diet, though. How many cussed avacados can you eat? :D) (Sorry, no cite-- I’ll leave it to someone who’s not as lazy as I am.)

Apart from high cholesterol, obesity and chronic constipation increase susceptibility to gallstones, which may help to account for vegetarians’ (typical) lower incidence.

FWIW, I’ve seen way too many people claim to be vegetarian, then proceed to pig out on fried zucchini, onion rings, pizza, pastry, etc. I’ve been wanting to try out vegetarianism for a while, but I’m not sure I can handle that diet. :slight_smile:

Well, as long as there is no meat included in those things, those folks are still vegetarians. Vegetarians with shitty diets, but that’s besides the point, I think. Now if those people are claiming to be vegetarians for the health benefits and proceed to scarf down a deep-fried Blooming Onion with a side of buttered rolls, then they’re just idiots.
