I was reading wkipedia about Arribiata. It claims that basil is a big no-no. Is that true in a traditional sense? I think most of the stuff I’ve had has very clearly had basil, and I considered it one of the main great flavors of the stuff. Whether or not is is “right” I will still continue to make it that way, because I like it much better, and hell, when I make it with Italian sausage it is my favorite Tomato based pasta sauce of all time, whatever the name should be.
But I was curious, do some people get panty-wadded about basil in it?
They may have been talking about Basil the Filigree Siberian Hamster, in which case it’s a good idea to keep him out of the sauce(or the ratatouille for that matter)
As far as the herb goes, as long as it tastes good, why is it anyone’s business?
Both of the reference links, including the one that’s used as a reference in that sentence, include basil in their recipes. I suspect vandalism, or opinion masquerading as fact. I’ve removed that bit, as it conflicts with the cite.
In fact, there was a slightly more neutral version (‘the majority of chefs in Italy do not use it’) before the anonymous editor (which is a pretty good sign it’s deliberate vandalism, not just dumbness) changed it to the absolutist version…so I’ve edited again, and restored a version of the more neutral wording.
