Asian rib dishes

We ate at Mr. Chens today.
They have many things that seem unusual to us. Many pork intestine dishes, for example.
We had pineapple shrimp and pork dumplings, which are both outstanding.
Spicy Spear (sp) Ribs had ribs cut up and cooked with vegetables in a sauce that reminded me of Lover’s Chicken.
The ribs had been cut perpendicular to the bone, and meat with rib bones in bite sized pieces were in the dish.
Is this usual in authentic Asian dishes?
The hell do you do, chew the meat and spit out the bones?

I’ve had the Korean dish kalbi served like this, and similarly a pork rib dish at dim sum that we don’t know the name of but which we call “pig knuckles” because it’s boney and gristley.

We tend to pop the whole thing in our mouths, chew off the edible bits, and spit out the bone.

Yes Korean short ribs.

Hmmm, and being in Korea just now I think I now know what I will be having for lunch!
