Asparagus Over Water?

I remember a while back hearing how certain vegetables contain enough water that nonstop water drinking is unnecessary. One specific vegetable mentioned was asparagus, about how it contains about 90% water. Most research I have done (the last ten minutes over the internet) has also stated that fruits and vegetables contain over 80% water (meaning only 20% solid mass?). Example:

Now, when this is said, do they mean after boiling the veggies? I just ate a piece of asparagus and it seemed a little dry. I can see tomatoes (fruit), but what about radishes? Where do they get this from?

Most of the water is in the cells of the vegetables. In college biology we did an experiment wherein we dried various veggies in an oven to drive out all the water, and compared the masses before and after drying.
