I would argue that few shows are actually about single parent families but alot do contain them.

I disagree, there at least a couple of dozen shows where the main theme is having to be both a mother AND father to kids. Single parenthood is a great situation for situation-comedy, since you have the kid(s) to write about, plus mom/dad gets to be put in romantic situations
