Long ago, in this thread, I promised YWalker that I’d try to get my mom’s recipe for banana and pecan ice cream. Well, I finally put the broad in a headlock and muscled it out of her.
This, my friends, is heaven in a pint of ice cream.
Note: there is absolutely nothing healthy about this stuff. It’s all fat and sugar. You could change the recipe to make it more healthy, I suppose, but where’s the fun in that?
Make it in a standard ice cream churn (4 quarts, I believe.)
4 eggs,
1 cup DARK brown sugar,
1.5 quarts whole milk,
.5 pints whipping cream,
2 cans sweetened, condensed milk,
1 tbsp vanilla extract,
4 large, very ripe bananas,
4 ounces chopped pecans.
Combine eggs, cream, brown sugar, and vanilla in a bowl and mix until smooth.
Pour into churn.
Peel bananas and smoosh thoroughly. Don’t chop. G’wan! Get your hands dirty. It’s fun.
Add condensed milk, 'nanas, and pecans to churn.
Fill to 4 quart mark with whole milk and away we go!
For extra cardio-points, try a small dollop of milk chocolate syrup on top when it’s ready to eat.
