I knew the band was named after Pink Anderson (and Floyd Council). I always assumed that Pink was a nickname that Anderson had acquired. But I learned that his actual name was Pinkney Anderson.

Walt Mink named their band after a high school teacher.
Alferd Packer Memorial String Band, a traditional/folk/acoustic band in Kansas. They don’t seem to be playing much these days, but they’ve been around since the late 1970s and are in the Kansas Music Hall of Fame.
Named for one of the handful of men ever convicted of cannibalism in the United States. (His name is sometimes spelled Alfred, sometimes Alferd, and he apparently used both versions at different times.)
I don’t know if this qualifies, but Eve’s Plum is a takeoff of Eve Plumb, who played Jan Brady on The Brady Bunch.
