I bought some beets at the farmers’ market today. Right now they are simmering, & I want to make a salad for a pot luck lunch I’m going to tomorrow. I can’t find any reciped that really appeal.
Any ideas?
I did have a wonderful beet salad at a party that involved fresh basil (I think), feta cheese, walnuts & balsalmic vinegar & would love to replicate it.
I was going to say something about feta and balsalmic vinigar. Although I made it with roasted beets (even better).

Look under food then search then enhanced search to narrow it down to just salads. There are a couple that sound close (feta, walnuts). Still think you should have roasted them though.
Well, for some reason I read the thread title as “beef salad” and thinking it was something sleazy (“hey, check out the–Beef Salad…”), I came in here.
So, it’s beets, huh. Red vegetables. Hmm.
Well, one of my all-time favorite Guindon cartoons has a child looking doubtfully down at a plate of vegetables, while his mother says earnestly, “They are the official beets of the Olympics…”
Which was funnier back in 1980, somehow. Before we all got used to the idea of “official this ‘n’ that of the Olympics.”
Well, I’d have to point ya to the links that have been posted. I don’t have any beet recipes besides borscht. Beyond that, I’m not even sure if it’s possible to do anything with beets to make them taste good except maybe cover them with lots of cheese and chili. They belong with rutabegas in the class of foods that are designed to torture children and ensure that your dinner guests won’t eat you out of house and home.
Ok. I guess I’ll be grossing everyone out with this recipe for my favorite salad and one of my overall favorite dishes. I think it’s called Sillisalati (Rosolli in Swedish?):
Herring-Beet Salad yum yum!
Take cooked beets, carrots, and potatoes (a cup of beets per carrot and potato) and dice up. We usually use marinated beets, but fresh ones are good too. You can also add apple (but this was a variant we didn’t do - must be a Western Finland thing). Add minced onions and dill pickles. Add a little white pepper. Add 1/2 cup of finely diced marinated herring to every 2 cups of mixed veggies. Mix thoroughly.
In a small bowl, mix together mayo, sugar, vinegar and a little mustard. You’ll have to test-taste to find the right combination for sweetness and tartness. When you have a dressing you like, pour over the above concoction and let sit overnight for maximum goodness (it should be a little “wet” as the potatoes will absorb some of the moisture).
Since it’s pink and could be mistaken for dessert, put a little note by the salad that it contains a bit of fish otherwise much gagging can be heard from the uninitiated.
Well…I like beets, herring (& stinky little fishies in general), and turnips.

I ended up kind of bastardising a recipe. Dressing: balsalmic vinegar, olive oil, lemon juice & garlic. Beets, boiled new red potatoes, finely chopped red onion & feta. Quite a few vegetarian types at the pot luck, so it all got eaten.
And I am definitely going to experiment more with beet recipes!
