Billy Goat Tavern curiosity

Okay, so anybody and everybody who’s ever cooked a hamburger knows that even though it’s tempting to press down on the patty to squeeze out the juices and hear that satisfying sizzling sound, you should NEVER do that.

However, you go to the Billy Goat Tavern, and the second a burger patty hits the grill, they actually take a heavy iron and throw it on the patty, flattening it.

Why do they violate this sacred rule of cooking??

It’s just just a different style. They cook up faster on a griddle and often get more of those lovely crispy bits.
This sitecalls them smashed burgers.
I’d call them 30’s style burgers.
