These here also skate the line of “I know it when I hear it”. The music qualifies but the vocals are nice but not exactly what I’m looking for.

Little Wing, while bluesy, is a ballad that was written by Jimi Hendrix, lyrics and all. The SRV version is pretty faithful to the guitar riffs, and done with a huge amount of soul, IMO.
You do realize Jimi Hendrix was not a soul singer. Or a soul music writer. And, to clarify, soul music-- blue-eyed or otherwise-- isn’t music with a lot of soul. It is a specific style of music. I noticed a lot of suggestions here are blues. While R&B and Soul music is heavily influenced by blues (and gospel) it isn’t actually blues. As judged by the “I know it when I hear it” criteria.
Even the Righteous Brothers, who basically gave birth to the term “blue-eyed soul”, sang songs like “Summertime”, and relied heavily on blues phrasing. I’m 68 and am well aware of Hendrix’s music and soul music styling, which is heavily emotive. Granted, my offerings were a stretch.

It seems to me that you’re looking for a particular type of blue-eyed soul, which is the smoother variety… also I get the feeling you generally prefer stuff from the 80s and later. (Which I don’t know too well, although the previously mentioned “Everytime You Go Away” by Hall & Oates/Paul Young seems like a candidate.)

I thought of a Stones song that fits the OP’s description: I Got the Blues, a deep cut off Sticky Fingers (1971). (The link is to a live version).
Despite the name, it’s not a blues, but rather a slow 6/8 song with brass and a soulful vocal performance. It’s clearly influenced by Otis Redding’s [I Got Dreams to Remember.](I Got Dreams to Remember.)

Glad you enjoyed them! I was worried everyone had left and wouldn’t see it. I wish I could remember where I picked all those up, definitely not on radio or TV unfortunately. Mostly from combing through various MP3 blogs and Spotify’s “related artists” lists. Believe me, I have sifted through tons of dirt to find a few nuggets of gold.
I’ve found that if I find something good, odds are there are other gems on the same label too. Pretty much everything on Daptone or TruThoughts labels are fantastic. I’ve been lucky enough to see a number of those bands live too, definitely don’t pass up the opportunity to see some great live soul when they come to town!
