Most of the brie made in the US tastes identical. French brie seems to have more variation. Vacationing in St Martin last year I had a French brie that was very soft (runny) and had a unique, excellent flavor.
At my local supermarket I found a French brie that comes as little individually wrapped “snack” wheels. I like it. When I unwrapped one of the wheels it was contracted/shrunken a bit. It was runnier than usual, and when I tasted it I thought maybe it was spoiled. So I took another taste. Yep, spoiled. So I tried some more, eventually finishing it. Mmmmmmmmmmmm.
So, is there a line between spoiled and extra tasty?
The rule with dairy products is, if it tastes bad, it’s spoiled, and if it doesn’t taste bad, it’s not. This is of course somewhat subjective. Maybe that cheese you had would be spoiled to a different taster, but it sounds like you liked it.
well that wipes out most cheeses for me; any time I’ve tried brie or camembert, the smell of the rind was so off-putting that I didn’t even want to taste it.
