Depends what kind of catering it is.
I worked for a small catering company when I was in college, and an on-site kitchen was often needed for some of their meals. For example, when we served lunch in corporate boardrooms, the food was often high-quality cuts of meat or fish, and would be done properly in an oven or on the stove on site.
Obviously the company also had meal options for places that didn’t have a kitchen, and we also sometimes brought our own electric frypans or portable ovens, but places that did have a kitchen had more meal options to choose from,
