Champagne Sorbet

About a year and a half ago the CEO of my company took all of the employees (around 50 of us) for a fancy Christmas dinner. On the whole I would have rather received an actually cash bonus for the cost of the meal, but that is neither here nor there. The best part of the dinner was the dessert which was three different flavors of champagne sorbet and it was absolutely delicious. Recently I have been craving this delectable treat again, but I really have no idea where to find it. I checked google and all I can find is recipes (though if it comes down to it I will go out and buy an ice cream maker for this purpose alone) but nowhere to simply purchase it pre-made.

Does anyone know where I could buy some champagne sorbet? Preferably somewhere in Michigan, but at this point I just want to know that it exists somewhere.

Oddly enough, I was idly contemplating making beer sorbet yesterday. (Watermelon sorbet won out, however.)

I can’t imagine how a champagne sorbet would be wildly different than a beer sorbet…

Ben & Jerry’s beer sorbet recipe is one and a half bottles (18 oz total) of flat dark beer and 5 tablespoons of sugar. Stir in the sugar until it’s dissolved in, then freeze in your ice cream freezer.

Two changes I’d make would be to just use two bottles and not quite seven tablespoons of sugar, and to change that sugar to the same amount of simple syrup so you don’t have to mess with trying to dissolve sugar in beer.

The nice thing with sorbets is that they’re not ingredient-intensive, so they’re generally cheap and quick to make, lending themselves to all sorts of experimentation.

If you don’t have an ice cream maker, you can also do these as a granita - pour the mix into a 9x13" (or similar size) glass pan and put it into the freezer. Stir with a fork every half hour or so. Once it starts to actually freeze, break up the chunks with the fork - the ultimate goal is a loose shaved-ice consistency, as opposed to a solid mass of ice.

Well, this is just great. They carry it at the grocery store I’m going to this afternoon. If they have the champagne, or the blackberry cabernet, I may need to rethink the grocery budget…maybe we don’t need cat litter this week…
