I like to make some tonight. They will involve wonton wraps, ground chicken and cabbage. And suggestions, Dopers?
Alton Brown did an episode on dumplings/pot stickers once. In fact, the recipe sounds pretty darn tasty.
Ming Tsai also had some tasty recipes on the site that’d qualify as dumplings or pot stickers.
You need to add minced garlic and ginger. And the sauce is as important as the dumpling. I think that is soy, rice vinegar, and a bit of sugar.
Thanks, I use something Japanese I found; soy, rive vinegar, wine, garlic, sugar and sesame oil.
I grew up on dumplings but for the life of me I can’t say exactly what is on the inside. There are of course lots of variants. But you pretty much nailed it: meat and some vegetables. I, too, would add some minced garlic.
As for sauce, I’ve always gone with just any ol’ soy sauce and some white vinegar (though, as I found out this xmas break, balsamic vinegar is a very nice subsitute).
I made several batches of steamed pork dumpling this weekend, inspired by Alton Brown. They came out very nice.
Ground pork, minced garlic, ginger, green onion and cabbage, an egg, soy and peanut sauce. Google around for a decent recipe.
Ah yes, jiao zi. The big question is boiled (shui jiao zi) or pot stickers. I like pot stickers. You put a little oil in the bottom of a hot pan, fry them seam up until they just start to lightly brown, then add about 1/4 cup of water with a little vinegar and cover. Cook them til the liquid boils off and then carefully remove them from the pan with a thin, metal spatula.
I don’t know about the potstickers recipe, but AB’s recipe for the steamed dumplings with tofu is delicions!
My pot sticker sauce has soy, rice vinegar, a bit of pickled ginger juice, and some smoked sesame oil. Yum.
I just rolled them up and into the pan…the first ones are two wrappers thick. :smack:

Cabbage and sausage reminds me of what my family used to like, although it’s been ages since we made it: Stuffed cabbage roll. We got it from Joy of Cooking. Mix sausage with egg and bread, then layer into a linen cloth alternating with layers of cabbage leaves. Tie up the cloth, so the whole thing is ball-shaped, then boil about an hour. While it’s boiling, make onion gravy. Mmmmm good.
That went well.
Here’s what I used:
1/2 Lb ground turkey
1 cup minced cabbage
1 garlic clove, two next time
3 green onions, chopped
1 tablespoon soy sauce
1 teaspoon ginger
Made pot stickers, served with jasmine rice.
Sauce: soy, vinegar,wine, garlic, sugar, sesame oil.
Outstanding!
