I didn’t quite get why Pelton was so insistent that Jeff order for him at the Mexican restaurant. Was it to further the illusion that they were on a real date?

Yes, he was definitely trying to make Jeff behave like his idea of a proper date.

Overall, I’m kinda meh on this episode, although there were some good moments, like the aforementioned “Sailing” by Christopher Cross.
