I have a bottle of sake in the fridge I bought to cook with. (Yes, it’s good enough to drink, but I don’t tend to drink more than a shot at a time). I have a few recipes that use a tablespoon at a time or less. I need more. I’m open to anything - vegetarian, fish, meat, etc. The only limitation is that the end product can’t taste like alcohol.
Furthermore, I would like to buy some rum. Again, I don’t drink much at a time, but I have a bigger group I can share with. This can taste like alcohol. No rum cake please (I know someone who makes great rum cake and I don’t want to compete with her. You can get drunk off her cake sometimes). Recommendations on what rum is good and what absolutely not to buy are appreciated as well. I seem to prefer spiced rums, but I’m open (my dad will drink either, so it’ll disappear).
I can wholeheartedly recommend Sake Salmon and Rice by Nigella Lawson. I’m not even a seafood person, and this is one of my favorites. I usually skip the marinating step, as I find that the sauce provides plenty of flavor on its own.
That looks really good. My mom and I love salmon - I think my dad can take it or leave it (he’ll eat whatever is put in front of him and he won’t say anything, but…)
If it helps, the original recipe (from her book “Feast”) used steak. But when she did the recipe on her show, for some reason she used salmon, so that’s how I’ve always made it since I already have plenty of recipes involving various cuts of beef. But that could be an option for your dad.
Made from leftover cookies (or buy vanilla wafers) and rum and chocolate, they were a favorite of mine when I lived in Germany. They refrigerate well and worth making a larger portion than you might think. Add more rum than recipe suggests…
A lot of times if a recipe calls for white wine, I’ll use sake instead as that’s all I keep in the fridge also (only for cooking, I’ve never tried to drink it).
