This is not so much about the magazine or its recipies, as it is about my mundane and pointless reaction to it this month, so I put this here.
When I received this month’s Cook’s, on the first page I opened to I espy the “Baking in a Dutch Oven” sidebar. And see the last sentence, noting that it is “the ideal environment to create and trap steam.”
snerk.
I’m sorry, maybe it was too much wine for the business dinner tonite, but all I can picture is Christopher Kimball pontificating about how Vermont does Dutch Ovens * better than every other state in the Union too, in the the tradition of that old-timey superiority he always blathers on about.
Alas, no. His editorial seems to be about lost recipies (… and mentions the “fecund aroma of yeast”… the Hell?). And the sidebar is for No-Knead Bread – but there’s beer in the recipie, which is no doubt how he’s planning for that Dutch Oven.
I wouldn’t stay at his house, were I you.
