Cooks! Need ideas for leftover ground beef and rice

Decent quality jarred gravy (I know, it’s not as good as homemade but it can be edible) + veggies of your choice.

Find a good fried rice recipe. Make it. Add the beef. Eat.

Taco seasoning, plus taco fixings; a bit of rice wouldn’t be bad.

I think cooked rice can freeze OK so you could put it aside for some time when you don’t have time to cook rice (or forget to get it started, then want some rice with dinner and go :smack: ).

It’s a shame that you don’t like stuffed cabbage, because then you’d be able to use DDG’s suggestion and use the leftover cabbage to make slaw. I find that lots of people like to eat slaw on a barbecue sandwich. My favorite way to make barbecue is to smoke pork butt until it falls a part, then serve it dry and let everyone choose their sauce of choice. Of course, there’s always left over pork, but pork quesadillas are fantastically easy to make. Just toss some pork and cheese in a tortilla and cook it on a skillet. The only problem is that tortillas always come in bigger packs then just you and your husband would need, so there would be leftovers. Leftover tortillas are really easy to use up though. I like to make enchiladas with them. Just cook up some beef and rice. You have to be careful cooking the beef and rice, its easy to make too much and you don’t want to have leftovers, do you?
