Crapacos -- Or: throwing what you have together

Recently I wanted something hot for dinner, but I didn’t feel like going to the store. I also didn’t feel like defrosting and cooking the ground beef. So I decided to make ‘crapacos’; tacos made with whatever crap I happened to have on-hand.

I happened to have half a can of refried beans in the fridge, some Velveeta Singles*, some bagged salad, and some corn tortillas. So I put a large tablespoon of beans on a steamed (dampened and put into the microwave oven) tortilla, added half a slice of cheese, folded it over, and fried it in oil. When the tortilla was crispy I added Tapatillo sauce and some of the salad. Not bad at all.

So let’s hear some of your ‘pantry raid’ recipes.

*I’d heard that Velveeta was good for grilled cheese sandwiches, so I thought I’d try it. Real American cheese is much better.

The day before yesterday there was no food in the house and I didn’t want to go out, so I pulled some Welsh rarebit out of thin air. I’ve never made Welsh rarebit before in my life, but I figured it was just some cheese and some Worcestershire sauce and stuff, and maybe some beer. It was good, although my boyfriend was all “We’re having cheese on toast for dinner?” until I told him he could eat it or go out and forage, and then he said it was good. :slight_smile:

We just had “corned beef hash burritos” for lunch:

Corned beef out of a can, with a sprinkling of pepper

Leftover bell pepper slices

Lettuce from the garden

Leftover flour tortillas

Worked out pretty good, actually.

One of our most successful recipes was created out of what was left in the refrigerator and cupboard on the last day of an RV trip. It combines chicken, Italian sausage, canned tomatoes, canned white beans and some fresh rosemary. It’s terrific and we’ve since served it to guests at home to rave reviews.
