What have I been missing for the first 51 years of my life?! I just made and devoured my first Croque Monsieur…holy cow, those things are fantastic!
Topped with my first ever bechamel sauce; my other half, my neighbors and I have now become addicts. I cannot wait to try a Croque Madame.
Yum , yum and triple yum. I am open for other CM recipes if anyone is willing to share.

Oh yeah, I get hooked on them all over again, whenever I visit Paris.
My man was completely hooked on a (Belgian) variant called the Croque Speciale-- had meaty marinara sauce atop.
A sick (good) Dutch relative is the uitsmijter: a couple of pieces of toast with a slab of ham, eggs over easy, and a layer of edam all stacked.
Aren’t they so delicious! I haven’t had one in years… since I was in France. Hmmm… all this talk is making me hungry.

David Myer’s Croque Monsieur This is the recipe I followed, I did use a fontina cheese instead of the guyere, but it was gut bustingly yummy. It really is an easy and delicious sandwich.
Now is the time to try a real Welsh Rabbit (Rarebit).
