Dandelion recipes

Our yard is currently covered in beautiful yellow blossoms, many of which I’m leaving for the bees. The rest I’m trying out in various recipes. So far I’ve made two batches of jelly and I’m planning on making shortbread cookies on Monday. Do any Dopers have suggestions or recipes I can try?

I’ve been wanting to try making dandelion wine, but it takes a lot of dandelions:

Dandelion salad is a favorite in my family, but it might be too late for that: You have to gather the greens before they bloom, or they turn bitter. You take a bunch of greens, clean them well (that’s the hardest part), and chop them into bite-sized pieces, then mix them in with hardboiled eggs, boiled potatoes, and chopped onions. Then, right before serving, you fry up some chopped bacon, mix the bacon and grease with apple cider vinegar and sugar, and pour that hot dressing over the salad and stir well.

The proportions I use are about
1 grocery bag greens
4 eggs
1 1/2 potatoes
1 onion
1.5 lb bacon
6 oz vinegar
1/2 cup sugar

That sounds like a recipe I could use with spinach, too.

Spinach would probably work. When we make it out of season, we usually use endive.

I had to laugh at the shortbread recipe: “a heaping tablespoon of honey.”

I didn’t even see that. I might substitute dandelion jelly for the honey. The taste is similar and I have 12 pints of it.
