I am suffering a doubled salad crisis. Not only is spinach my green of choice, the groceries have all stopped carrying my dressing, too! I can make do without one or the other, but both? sob
I sent a tearful email to the company that makes my dressing and they will sell it to me by the case. Woo!
Still here! What’s silly is that my grocery store kept it stocked through the first week of the scare and** then ** pulled it. I still have a little left and I feel like rationing it to last a few days! The only dark green raw thing in a bag was kale. The packaging doesn’t even act like you can eat it raw but I guess I’ll find out.
My farmers’ market spinach salad tasted all the better for having a slightly forbidden aura, like I had scored it on the street and had to eat it on the sly. Although the basket from which I bought it had a sign pointing out that it was harvested in small batches from an entirely different area than Salinas, it wasn’t selling. I had first grab.
I had it dressed with olive oil, balsamic vinegar, lemon and a sprinkling of big flaky sea salt, and savored every bite.
