Deep Dish Pizza

So, I’ve been thinking about making deep dish pizza for about a week since I saw a Bobby Flay throwdown. The guy he was going against didn’t cook the sausage before putting it into the pizza, he just stuck it on top of the mozz at the bottom of the pie. Anyone done this? Does it work? Get too much grease in there?

He didn’t cook his sauce either.

I worked at a pizza place in the Chicago area and we never cooked our sausage before it went on the pizza. We mostly made thin crust pizza, but they also had a pan pizza.

I’ve been wanting to try it since I saw that ep, too. I love Chicago deep-dish/stuffed pizza. I too was also a little :dubious: at thinking of the grease that sausage must release, and surely the whole thing would be soggy? But who am I to argue with success, I suppose. Some of the other throwdowns have gone into more detail about the ingredients and proportions for things, I don’t remember seeing much detail about the crust, other than vague things like a lot of fat/shortening, etc. If anyone knows a great recipe, I’d like to see it (of course I could find one myself, but it wouldn’t have the personal recommendation of a Doper :stuck_out_tongue: )
