Desserts for vegans

A woman at work is having a birthday tomorrow. She doesn’t want to advertise it, but I wouldn’t mind bringing in something for her and a few other people to enjoy. Usually this wouldn’t be hard at all; we’d just get a cake or one of those giant cookies with whipped cream writing on it. But this woman is vegan. What kind of sweets and baked goods are acceptable for vegans, since I know they can’t have any eggs or dairy? If I can buy something at Super Target today on my way home, all the better. But I’m leaving in half an hour!

How about strawberrys and chocolate syrup to dip them in? I’m not sure if Hershey’s syrup is vegan, but the berries would be.

Most baked goods would be out. There are variations on ice cream using soy or rice milk, but I’m not sure you could find them at Target.

Sorbet?

Most any other dessert I can think of has eggs.

Ooh - Fruit and Coolwhip.

All good ideas. I had actually decided to make fruit cobbler using one of those boxed yellow cake mixes and pouring a can of Sprite over it, but I want to double-check in case the cake mix contains butter.

Vegan Chocolate Mousse

Your local grocery store will probably have egg substitutes that, at least when combined with a bnuch of other ingredients, duplicate the real thing pretty well.

Umm, most egg substitutes are made from egg whites. I don’t think there is such a thing as an eggless, egg substitute. A combination of applesauce and veggie oil can substitute for eggs…poorly, IMHO as I’ve tried it before.

How about an apple Brown Betty/crumble made with margarine?

I think my other co-worker is making something like that for her. The vegan lady didn’t want us to make a big deal about it anyway, and nobody bothered to find out she was vegan except me. I think we’ll be okay keeping it as a small thing, and she’ll be touched just the same.

Soft tofu can substitute for eggs. Quite well, in fact, although it does make the baked goods stickier than egg does.

If she doesn’t want to advertise it, then why are you doing anything? Maybe this (her difficult dietary needs) is precisely why she doesn’t want it advertised.

Probably too late to help with this specific situation, but I’d have made a shortcrust pastry case, baked it blind and filled it with fruit jelly - the jelly is actually nothing more than berries (blueberries are good) and a little sugar and a dash of water (or booze), simmered briefly to release the juices, then thickened with corn starch mix the corn starch with a little water and stir vigorously when adding it to the fruit mixture - continue heating gently until the colour returns to a dark and clear state, then pour into the pre-baked, cooled pastry case.

Watch out - some vegans won’t eat refined sugar, either. (some refineries (not all) still use bone char in the refining process.)

Probably too late now, but a natural food store might have been able to help, or answer questions. There was one tiny shop in the town I grew up in, and they made all of their sweets with fruit sugars.

Hard to say, each person who identifies as a vegan is different, and have varied personal menu plans.

That’s a good point; thanks. Substitute some apple juice (the sweet stuff from concentrate) in place of the water and sugar above.

One of my favorite desserts is usually served over pound cake, but it’s just as good by itself:

Wine-Soaked Pears & Cherries
2 ripe pears, peeled, cored and sliced
3/4 lb. cherries, pitted (one bag of frozen cherries)
1/2 cup sugar
1/2 cup red wine (the better the vintage, the better the end result)
1 tsp. lemon zest

In a large saucepan, stir together the wine, sugar and lemon zest until sugar is dissolved. Add cherries and bring to a boil. Simmer 10 minutes. Add pears and simmer and additional 4 minutes, or until pears are tender. Serve warm or chilled.
