My grandmother started this tradition sixty odd years ago.
We always make up 4 extra pans of chicken & cornbread dressing, cover in foil, and put in the freezer. It’s ready to bake after thawing. 
Between now and Christmas we’ll bake a pan of dressing every week. Saving the last pan for Christmas day.
Did I mention how much I love chicken & cornbread dressing?
I could eat it year around.

Maybe this discussion thread will take off today. If you make one pan of cornbread dressing then it’s just as easy to make a few pans for the freezer too. You already got the chicken cooked and hopefully plenty of broth. No need to waste it.
I’ve never done this. I never make cornbread stuffing, in fact, because I don’t care for it, unless it’s from Mimi’s Cafe.
Now, I HAVE deliberately made up extra meatloaf and lasagna and spaghetti sauce and frozen it in individual portions. I refer to these as my homemade TV dinners, and my husband is always very happy when I do this, because there are times when I’m not feeling well, and he’s not a good cook.
My Mom sent some of her cornbread dressing home with me yesterday. It’s too much for us for one serving, so I’ll be freezing a lot of of it today. Which is great because now I can have it a few more times in the next few months. I love this stuff way too much - being diabetic and all.
