The diner where I often have breakfast (Tops American Grill) makes the greatest corned beef hash in the world. So I’d order my favorite: corned beef hash, two eggs over easy, home fries (also exceptional) and rye toast.
When I get tired of that,I’d go with their bacon, tomato, and cheese (swiss) omelette with home fries and ray toast.
With a half dozen genuine diners within ~10 minutes of my house, a Jersey Diner Breakfast™ is a fairly normal thing.
My go to?
Scrambled eggs.
Home fries, well done.
Toast (usually white unless I’m trying to be healthy, then wheat)
Pork Roll*
Mmm… coffee
If you haven’t been to a Jersey diner you really need to try one
- Bacon is an acceptable substitute, but nothing beats pork roll**
** Case’s Pork Roll that is… not “Trenton” brand, and definitely not that “Taylor Ham” crap.

Sternvogel @80:. Weird how so many people don’t finish the home fries. I am one of those anal Russel Hoban* people who makes their omelette, potatoes, sausages, rye toast, and tomato juice COME OUT EVEN.
I made a highly successful pan of home fries last night to accompany a dinner of pork chops with mustard vinaigrette and grilled shiitake mushrooms. The secret is LOTS AND LOTS of butter.

Biscuits ‘n’ gravy, couple of sausage links (or patties), crispy hash browns, a ramekin of hatch green chile all washed down with some Jamacian Blue Mountain. Maybe a mimosa too (juice optional).
Damn, I’d KILL for a Full English. Never seen a grilled tomato or mushroom caps offered for breakfast anywhere in America, though, let alone a nice white pudding or gammon.
Alright, next time I am there, that’s what I’m going to try. Sounds healthier than the hash and fried rice.

A fresh made flour tortilla (from the store down the street) folded around diced bacon, egg and cheese - topped with hatch chili sauce. Black coffee to wash it down.
Cheese blintz with cherry sauce. Man, it’s been a long time since I had one.
Glazed cruller French Toast, sausage patties, three scrambled. Chocolate milk.
Alternate: Omelette with mushrooms and swiss, sausage links, English muffin with butter and strawberry jam. Coffee light and sweet.
Eggs over easy, corned beef hash, hash browns, coffee with skim. Hold the toast.
I don’t really care much for Tabasco sauce execpt in a diner setting. It’s probably just habit but a couple dashes makes the eggs and hash browns sing.
The green Tabasco is ONLY good at breakfast. But only if you can’t get a real, fresh salsa verde.
I would eat all of the breakfast possible.
