He’s the only person I’ve ever heard do this. I’ve always liked his music because of it. It doesn’t have to be the guitar if anyone knows of any other artists.
Oteil Burbridge does it. He plays bass with the Allman Brothers, Tedeschi Trucks Band, and a few other groups.

Keith Jarrett is perhaps the most known for this. Oscar Peterson does it, too. Thelonius Monk. Jimmy Smith (on organ). Oh, and Errol Garner. It’s not really all that uncommon. When I briefly took jazz piano lessons, one of the exercises or tips for improvisation was to scat along your solo.
David Gilmour does it on Wish You Were Here starting at about the 4:00 mark in that example. He also does it on some older stuff. He sings along with his guitar during the violent part of some versions of Careful With That Axe Eugene.
Actually, after watching the George Benson video, my suggestions may not be exactly what you’re looking for. The singing is in the background and not really supposed to be part of the recording, whereas George Benson’s singing is into the mic and a featured part of the solo.
I think Eldee Young of Young Holt Unlimited does a superb job of it on Yum Yum yet I find George Benson’s style annoying.
