Does anyone cooking pudding from scratch anymore?

I plan to make some from scratch, now that I have some carob to try. I had to go off of chocolate because it makes me jumpy and irritable.

I think you’d be better off making vanilla or butterscotch pudding than trying to make carob taste good. Vanilla and butterscotch are both awesome.

My children beg for home made butterscotch pudding. I use Christopher Kimball’s recipe from his Cook’s Bible. There’s lots and lots of vanilla in it. I think I use a quarter cup or so. Not kidding.

I have about five boxes of pudding in my pantry. i think the are past their date. I can’t bring myself to make it. Box pudding just doesn’t taste right and then you have to eat it cold. Ugh. Cold pudding is completely wrong. Pudding should be served warm so the whipped cream melts when you put it on. It’s what I grew up with. It’s the right way to eat it and no one will ever convince me otherwise.

Does rice pudding count? I always make that from scratch.

I haven’t had real pudding in years.

Just recalled something from the distant past. At least 20 years ago because my kids were little. We used to go to something like a Dollar Store at the mall that had big #10 cans of instant pudding mix for institutional use. The stuff was freakin’ delicious. Way better than any pudding mix I’ve ever tasted. I’d throw a little brandy into the mix and serve it as chocolate mousse. People thought I’d spent all day making it.
