I have purchased tilapia seeral times…and always, it seems to have a muddy flavor. The only time I’ve actually liked it, was when I had it deep fried-the frying seemed to dissipate some of the mud taste.
Where can I buy good tilapia fish fillets?
Being as tilapia is farm raised in tanks, I don’t think there are any “good” (non-muddy tasting) tilapia fillets out there to buy. ( Maybe wild caught would be tastier,? but I’ve never seen it.) They aren’t bottomfeeders like catfish, so I don’t know why you think they taste muddy. It’s fairly cheap, which is why it’s so abundant. Tilapia is low in mercury but deficient in the omega oils that are supposed to be so healthy for you. My mother used to soak fish in milk before cooking, but that was to take away some of the fishiness.

I’ve never noticed that, and I eat tilapia more frequently than any other fish.
Do you buy it from the same place each time? I’d try looking for wild-caught and see if that makes any difference in what you taste.
Whenever I have it, which is altogther too often because of its relative cheapness, it doesn’t seem to have much taste at all. What little it has isn’t particularly pleasant to me, so I like it drowned in sauces. But I wouldn’t describe it as muddy.
