double-yolked egg

This thread is responsible for me having some nice, farm-raised (allegedly; I haven’t seen the farm), scrambled eggs for breakfast. Yum. No double-yolks, though. :frowning:

It made me do eggs Benedict with proper hollandaise sauce, smoked ham, an organic free range egg, and English muffins. About an hour’s cooking, and three minutes to consume. Still, worth it in the end.

I just ate cinnamon toast for breakfast. No eggs for me. :frowning:

I gotta admit, I’ve never seen a double-yolked egg before. My brother’s cracked open a truly disturbing egg before–I don’t think there was entirely a yolk in there–but no double or triple yolks.

You think that’s funny, try selling eggs from Araucana chickens. They lay blue-green eggs. Tastes the same but some people just can’t get past the blue-green shell without pulling the pukey face. Which can really be fun to watch. :smiley:

IME, they’re much more likely to come from young hens that are just starting to lay eggs. You can end up with all sorts of weirdness–double-yolk eggs, miniature eggs, eggs with shells soft enough to be flexible, stuff like that.

Yeah, isn’t it amazing to have eggs that actually taste like eggs? I felt the same way the first time I had a farm-raised chicken. Who knew chickens had flavor? It’s my observation that most American consumers have forgotten what food is supposed to taste like.

There’s a well known breakfast place in Chicago named Lou Mitchell’s - all of the eggs they serve are double-yoked. One day I asked the waitress, a kind of a cranky older woman, where they got all the double-yoked eggs.

“I don’t know hon, horny chickens?”

I’ve had a fair number of double yolkers all bought at Tesco.

Only once have I had a tripler

Our previous batch of hens laid double yolked eggs about half the time, but the batch we have right now dont seem to be overachievers…

You should try home groen turkey if you think home raised chickens are good … the breast meat has distinct muscle fibers instead of an unexercised spongy mass of white meat [think white meat textured like thigh or leg meat] with a very rich flavor.

Our fun poultry order for this spring is 2 bronze turkeys, 4 roman tufted geese [1 male 3 females] and 4 runner ducks [1 male, 3 females] We already have someone interested in buying duck eggs, and may have someone interested in the goose eggs.

We have a mix of full sized chickens and bantams. The bantam rooster [Chewie] is about a third of the size of Cogburn who is some sort of rhode island and ghu knows what mix.
