I agree with your article about freshwater drum. The web link that’s supposed to bring up recipes for drum is a dead link though (404 error). I wonder if those recipes may be posted someplace else.

I did find a recipe for gaspergoo etouffee at http://www.realcajunrecipes.com/recipes/cajun/gaspergou-etouffee/627.rcr that is pretty good.
