What can I make with them?
I’d prefer vegetarian ideas, but I’ll take others too. I’m looking for non-traditional recipes, not egg rolls.

I wonder if you could make peanut butter and jelly rolls with them.
I haven’t tried it myself, but a lot of people use them for quick ravioli.
A lot of Indian people use to make samosas
Cut them into bite-sized pieces, and either bake them with a spritz of oil, or get dangerous and deep fry them. Drain on paper towel and sprinkle with your favorite herbal mixture or cinnamon and sugar for a snack.
Here’s a few ideas I jotted down from I forget where, and haven’t tried out, but they sound tasty:
Make a filling of scrambled eggs with spinach, cheese, cooked peppers, onions, or sausage. Spoon into a wrapper, fold and seal edges with water, brush with olive oil, and bake at 400 degrees for a few minutes until hot and lightly browned.
Another filling: tomatoes, mushrooms, mozzarella cheese, garlic, oregano, cooked green pepper…spread a wrapper lightly with pizza sauce, add ‘toppings’ - fold and seal edges, brush or spray with oil, and bake until hot and lightly browned.
There’s a fruit-nut version: chop apples, peaches, or pears, add pistachios or pecans, a dash of milk, sugar, and cinnamon. Spoon into center of wrapper, fold closed and seal edges, heat in a little butter on each side till light brown.
Aaaannnd: cut wrappers into strips, brush with canola oil, salt and pepper. Bake till firm and crispy, serve like chips with salsa, hummus, or a Chinese type dip (duck sauce?).
You can use them for origami.
Crab Rangoons
On some Food Network show or another (I think it was Guy’s Big Bite, but don’t quote me on that), he made fried cheese in egg roll wrappers; he just used plain old mozzarella sticks like you buy at the grocery store, and wrapped them up in egg roll wrappers, because the wrappers (as opposed to breading them) keeps the cheese from oozing out into the hot oil. I strongly suspect Guy Fierri is a gigantic douchebag, but I thought it was a great idea, nonetheless!
I don’t like all the dough when making chicken enchiladas, plus I have a hard time folding and rolling the tortillas without breaking them. So I like to use egg roll wrappers and make lots of mini-enchiladas.

Seriously on the cheese. There’s a place I used to go to up in Milwaukee that did this: Eggroll wrappers, and montery jack cheese for the fillings. Served it up with chili. It was to die for.
You can make kind of a ravioli filled with Nutella and deep fry them, then dust with powdered sugar… mmm
Or, you can get some nice ripe bananas, cut them into nice long strips and roll them up with some chocolate chips and deep fry them, then dust with powdered sugar…mmm
