what is the difference in the way the mail is processed if you use the “to” field and type in multiple recipients vs. using the “cc” field to put in the others?
I think that if you just fill in multiple names in the “to” field that the recipients will see all the names listed in their email’s “to” field. With “CC”, they’ll see who else you sent the email to only if they have their email program set to see the complete header, and not everyone has their email program set for this.

Of course, I think the best way to do it is to use “BCC”. Just fill in one email address in the “To” field (maybe send it to yourself) and then put all the other email addresses in the “BCC” field. That way, no one will know who else got that email from you. (This is good if you want to keep everything tidy and private.)
With my email program (Eudora) anyone not listed under “bcc” sees every other name and the delivery mode is the same. So I make a distinction as more of a heads-up to the recipients about how much attention I want them to pay to the message: “To:” means it’s specifically for them, “cc:” is just an FYI-type of thing.
This practice originated in the business office with paper (remember paper?) - you addressed a memo to the person you wanted info or action from; the cc’s (carbon copy) went to folks who have an interest and want/need to know what’s going on; bcc (blind carbon copy) showed only on your copy and the bcc person, so the others didn’t know there was a bcc. It should work the same way with e-mail.
