Emeril’s Essence.
Heh. That’s just it, it doesn’t. Plus, it is too salty for all the stuff he uses it on. You might recall Fenris’ thread on Emeril’s deplorable “cooking”, though it was probably lost.
It’s not a tightly guarded secret- Emeril’s recipes are almost always available through the web site of www.foodtv.com
If you want to make your own essence, you probably have most of the ingredients in your kitchen cabinet. Off the top of my head, the ingredients were:
2.5 tablespoons of paprika
2 tablespoons salt
And then 1 tablespoon each of
onion powder
garlic powder
black pepper
cayenne pepper
thyme
That’s about it (I MAY be off a little… as I said, go to www.foodtv.com to find the exact proportions.
Essence works very nicely for SOME dishes, but I find it a little too spicy for others. Don’t use it as liberally as Emeril does- not at first, anyway. Use a little… if you like it, you can always use more in the future.
