I just get Osem brand falafel mix from the market. I’d like to hear how to make it from scratch as well.
Just a bump because I have a holiday coming up and maybe try again. I’ve made a few attempts. Most recipes call for food processing garbanzo’s, maybe some onion, pepper and garlic, cumin seeds, fresh cilantro, maybe some flour or bulgar, baking powder and then deep fry/shallow fry/bake. Here’s a step by step video.
I also went to Hong Kong about 2 weeks ago and bought some Casbah brand instant falafel mix. Since I know have to travel to HK at least monthly, I’m no longer driven by falafel cravings in a country without the mix.
Also guess which method was uncomparably better? Yep, the mix. :smack:
Anybody have a good recipe or thoughts on how to make falafel, or is it one of those things like pancakes where a good mix just makes sense?
On the other hand, I figured out a pretty decent tofu nut burger that’s fast and easy if you have ultra firm dried tofu (豆腐干).
Must haves,chick peas (canned will work),tahini,parsley,cumin,garlic.Salt & pepper of course.
I don’t use a recipe,but they’re easy to find.
You don’t need a processor. Mash the peas pretty well.I like to toast and then grind the cumin. Mince everything as fine as you can. If you deep fry,you want the mix dryer than pan fried or baked.(Use the cooking liquid as amendment).
Roll the mix into balls about 1" dia. To pan fry,squash them a bit.
Must have jajik sauce to go with-yoghurt & dill,a bit of olive oil and lemon.Cucumbers in season.
mine always came apart. What was I doing wrong? (my recipe did call for baking soda…)
Here’s mine. An old landlord gave it to me over 15 years ago and it has yet to fail. However, he also gave me a little chrome tool with a paddle which I use to shape the falafel into firm discs. I’m not sure what it’s called or how much it has contributed to my success, but you can probably find one at a Mideast grocery.
Soak overnight:
1 cup of fava bean
1 cup of chick peas
Drain the beans well and mince (I use a food processor for speed) with:
1 medium onion
2 cloves garlic
1/2 cup fresh parsely
1 pinch hot chili pepper
1 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1 Tablespoon flour
1 Tablespoon baking soda
1 teaspoon salt
1/2 teaspoon cracked black pepper
shape 'em and fry 'em until they float to the surface. Drain well on brown paper.
These nuggets taste just fine by themselves but become a delight when served with a traditional tarator:
Mix
3/4 cup tahini
1/2 cup lemon juice
1 (or 2!) clove garlic minced
4 Tablespoon water (or more for thinner sauce)
1 dash of hot pepper sauce
salt and cracked pepper to taste
Pancake mix :eek:
But that’s a different post.
Edit to add: This recipe makes alot of falafel.
