In-n-Out is another that does it to demonstrate that their kitchens are clean. And also to show that they’re slicing the potatoes there and there are no weird mystery ingredients.
A bar I used to spend much time in hired a chef to revamp the kitchen/menu. I’d always sit where I had a good view and watch the magic happen. I would totally patronize a place that, instead of dozens of tvs showing different games, had cameras in the kitchen that you could watch.
I like that The Colonel from Boogie Nights was cleaning the “burger machine.”
This may be related to dentists having open spaces for exams/treatment, so patients don’t get the idea that horrible agonies are being perpetrated behind closed doors.
That seems unfair to me, since if Chipotle lowers counters to wheelchair viewing level, servers are going to be bent over at waist for 8 hours–imagine their backs at end of day
