I consider the second Mad Max film, The Road Warrior, to be one of the greatest action movies of all time. The final chase sequence is awesome and one of the greatest chase scenes in movie history.
Also I am surprised no one has mentioned the insane gun shoot-out from *Predator *yet.

From the TV series The Sarah Connor Chronicles, there is the scene where the terminator Cromartie single-handedly takes out an entite FBI SWAT team while the Johnny Cash song “When the Man Comes Around” is playing in the background. They don’t even really depict the fight on screen but it effectively demonstrates just how bad-ass the Terminators are.
The ability of movies and TV shows to contain mini music video clips should be used more often. If you can have movie musicals where the actors break out into a dance, you could just as well have an action scene superimposed with relevant music of the same duration like this scene from Kingsman: https://www.youtube.com/watch?v=R3zdYUG2_RA
