I like the scene near the end of, “Statesman: The Golden Circle”, where Eggsy and his partner fight Agent Whiskey. The music goes real well with it, too.
Yeah, that was awesome. Vader shows just what kind of an implacable killing machine he was.
The entire movie The Raid: Redemption is basically one long fight scene. It is amazing, but extremely brutal.
Also, the end of The Wild Bunch, which inspired John Woo and other HK action directors.
The end of Serenity was pretty good too.
Every Bourne movie had at least one, like this one from The Bourne Supremacy and this one from The Bourne Ultimatum.

This fight was awesome, but pretty much everything in the movie was top notch.

I particularly like the first swordfight between Jack Sparrow and Will Turner in Pirates of the Caribbean. It was at that moment that my doubts about the movie turned into “this is truly going to be a swashbuckler of a movie of the old school”.
Which reminds me to bring up the brilliance of every Burt Lancaster/Nick Cravat “against all the guards” fight in The Crimson Pirate.
The League of Extraordinary Gentlemen: the fight between the League and the Phantom’s men in Dorian Grey’s library. Fast-paced, intercut brilliantly between the various characters…Captain Nemo proving to be a martial bad-ass, the gag with Dorian taking a full clip of bullets at point blank range: (“I’m complicated!”) and the great ending with Mina ("Now that’s your biggest mistake: thinking I need them to protect me!"). The movie itself could have used another re-write, but that scene is gold.
Vader and Luke at the end of Empire. The kid’s really showing his stuff, then daddy gets tired of screwing around and, as Chuck Klosterman put it, beats him like Ike used to beat Tina.
