Favorite Potluck Foods

Thanks for the recipes. I’m still making the decision (it’s for next Tuesday), but I have somewhere to start now.

The food sounds delicious - even if I don’t end up making it for the potluck, I’m definitely making the jambalaya for me.

My sister in law’s sister brings this to every family event and it gets eaten - I’m not big on fruit so I can’t vouch for it, but the rest of my family eats the heck out of it.

Fruity Coleslaw
1 cup (8 ounces) fat-free plain yogurt
1/2 cup honey
1/4 cup white vinegar
3 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (16 ounces) reduced-sugar fruit cocktail, drained
2 cups blueberries
1 cup sliced fresh strawberries
1 medium ripe banana, sliced
1 package (16 ounces) coleslaw mix
In a large bowl, combine the yogurt, honey, vinegar, lemon juice, salt and pepper. Add the fruit cocktail, blueberries, strawberries and banana. Stir in the coleslaw mix. Serve im¬mediately. Yield: 12 servings.

Individual sized greek appetizers…

Take frozen chopped spinach. Thaw and drain.

In a large bowl mix with feta and lemon juice.

Cut puff pastry in to 2 to 3 inch squares.

Put a dollop of the mixture in the square and use and egg wash to seal into triangles.

Coat top with egg wash and sprinkle just a little course sea salt on top.

Bake per the directions on the puff pastry package.

Make sure you make enough so everyone gets at least one.

Come on, somebody has to bring Green Bean Casserole.

It’s one of my favorite foods! Seriously!

My ex-wife used to take it often-and it always got finished off.
I think I’ll make it for dinner tonight.

Here’s one thing that at least makes it a little less work, yet not so little work as to ruin your justification for keeping half…

When you have the filling mixed to your liking, get a spatula and scoop it all into a zip-lock bag. Snip off a corner of the bag (don’t make the hole too big) and then squeeze it like a pastry bag to sploot the filling into the eggs.

Everybody loves these.

Asian Buffalo Wings

Bake or broil up 2 or 3 pounds of wings, which you have disjointed into three pieces each and discarded the tip pieces. Meanwhile, in a big bowl, mix up a cup of thick bottled teriyaki sauce, a minced garlic clove, a big pinch of minced ginger, some sesame oil and a couple of squirts of sriracha sauce. When the wings are cooked through, dump them into the sauce and toss them until they are thoroughly coated. Serve 'em up warm. You may add more sriracha if you like them hotter.

Deep fry them wings! Take them out of the fryer, barely drain the oil, then toss them into the sauce. Yessiree, that’s the way to do it! :wink:
That’s why god made deep fryers.
