The jury decides on the evidence as presented, it is not their job to throw out evidence that the judge has allowed. So they can respect the jury’s verdict, while not respecting the judge’s ruling that allowed evidence that (they say) should not have been allowed.
It’s all a matter of perspective:
“So even though we know he’s a sexual predator, we’ll do everything we can to make sure that he is afforded the due process he is entitled to under our legal system.”
That still only makes sense to me if you think the outcome may have been improper. There’s not much use in pouring your limited resources (time, money, etc.) into something if the conclusion is expected to be the same.
Sure, Duggar has a right to appeal. I don’t begrudge him using it. But, given that a sexual predator, I’m not going to put any effort into anything that might in any way make it easier for him to prey on children again. And if someone agrees with me that he’s a sexual predator, I’m going to look askance at them not having that view.
Nor do I. And, like you, I think he’s guilty and any appeal will not change that view. He deserves the consequence of his actions, but I am certainly not going to be bothered that he’s seeking to confirm that he received his due process and that his rights were honored.

(1) A person commits the offense of endangering the welfare of a minor in the second degree if he or she knowingly engages in conduct creating a substantial risk of serious harm to the physical or mental welfare of another person known by the person to be a minor.
(2) As used in this section, “serious harm to the physical or mental welfare” means physical or mental injury that causes:
(A) Protracted disfigurement;
(B) Protracted impairment of physical or mental health; or
(C) Loss or protracted impairment of the function of any bodily member or organ.
