I like salmon (broiled or steamed with tarragon) and tuna (out of the can, in sandwiches or on crackers). I’ve made tilapia (fried in oil, like in Chinese restaurants). And of course I like anchovies, fish’n’chips, and catfish with cayenne pepper. But I don’t think I eat nearly enough fish.
What kinds of fish are the healthiest to eat? (Uh… for the eater; not the fish!)
Aside from frying, broiling or poaching, what are some good ways to cook fish? Recipes please?
Oh,yeah! Swordfish, ahi, halibut, shark, what-have-you. I like to marinate the steaks in an herb lemon marinade, then grill 'til they’re just starting to flake. Seve with wild rice.
Johnny, tuna out of a can is not tuna. You need to get some fresh tuna steaks, spear them with dill and rosemary, and grill them over a hot fire for 2 minutes per side, so that the center of the steak stays damn near raw. Serve with lemon couscous and a light salad with walnut vinaigrette.
also good with salmon, shark, and swordfish steaks, just cook a little longer.
You can bake fish, especially in fish/potato pies but there are many other recipes.
Steaming is also another good way, especially if it has a delicate taste and texture.
Or you could try the Norwegian way which I don’t recall fully except that there is a certain amount of leaving it to go pretty much off for a long period and then proving your manhood by eating it(and surviving the stay in intensive care no doubt) Lutefisk I think it’s called.
Really, all kinds of fish are good for you–best to have a variety to get different benefits. Ocean seafood is good because of its iodine content (especially if you’re on a low-salt diet and can’t have much iodized salt). Salmon and other higher-fat fishes are good for you because of the Omega-3 content. The only thing to watch out for is shellfish–even though they are high in nutrients, most of them are also high in cholesterol (especially shrimp–7 shrimp will give you your day’s recommended maximum of cholesterol)
My favorite way to cook salmon is pan-searing then finishing in the oven. Have a skillet that can go from stove to oven, first of all (no plastic handles) and preheat your oven to 350. Make a herb/spice rub for the fish–have some dried thyme and oregano, black pepper, a little salt and press it onto what will be the cooking surfaces of your salmon filet. Heat your pan and add a little olive oil. Lay down your filets and let cook about a minute or two–enough so they’re seared, and not sticking to the pan–and flip, letting sear for another minute or so. Then throw into the oven for a few minutes to finish the cooking. Best served with either rice, angel hair pasta, or couscous.
Lutefisk is dried cod, treated with lye, that is boiled with coarse salt and served as a digusting glop of gelatinous crap that I wouldn’t feed to my worst enemy’s dog.

Trout. Easy campfire recipe: Clean fish, de-head. Put flour in a pie tin and dip fish in flour, coating it. Put a bit of butter (or PAM, or use a fancy non-stick skillet and skip the butter) in a hot skillet and pan-fry the breaded fish.
I would agree that the best way to cook steak type fish is grilled. Tuna is best medium rare but I would fully cook all others. Tuna, Swordfish, and Mahi are my favorites grilled. I just brush with some olive oil, lemon juice and pepper and some other seasonings.
I tend to put other kinds of fish on the broiler. I had some wonderful Sea Bass last night. It is a greasier fish so I don’t even put olive oil on it. Flounder and Grouper are also really good this way.
Fish is to me the easiest thing to cook and I eat it probably four or five nights a week. I live by the ocean so I can get some kind of fresh fish all year long. I can’t imagine having to live in-land and only getting frozen fish.
