Zucchini and Pita bread
Shredded Zucchini fried up with curry powder and ground turkey. Served in a pita bread with vinigrete dressed leaf lettuce on the bottom (to protect the bottom of the pita from geting too soggy), then the zucchini mixture and topped with yogurt.
I am sure my mom didn’t invent this but we had it on occasion and as far as I know, we were the only kids in town who ate these. My sisters say they are scarred now but I thought the dish was fine.
(This can’t be an aberration, but no one I’ve met can recall eating this.) Leftover hot cereal, refrigerated in Tupperware tubes, then sliced into small discs and fried in oil (or bacon grease), served with butter and maple syrup.
Wasn’t really a hash. It was browned hamburger with onions, and then add diced potatoes. Simmer in a gravy made with beef broth and corn starch. Delicious! I still make it.
