Food losing flavor

I have a simple question. why is it that, whenever i go to reheat food (macaroni & cheese immediately comes to mind), it is completely void of any flavor whatsoever. where exactly does it go?

A Couple of Reasons:[list]
[li]If you are not covering your food during cooking, storage or reheating you are allowing many of the flavor components to escape of become confused with other odors.[/li]
[li]Mac and cheese is pretty bland fare to begin with. If you aren’t storing or reheating it correctly there’s not much left to taste. I recommend a sprinkling of Parmesan stirred in right after reheating.[/li]
[li]If you do not add a small amount of water to whatever you are reheating it will not reconstitute in the same fashion as before. Especially if there is a significant amount of sauce left on the sides of the cooking or storage container. A moist cooking environment encourages the reincorporation of this important source of flavor.[/li]
Lastly, overcooking is one very common reason for loss of flavor in reheated foods. The flavors tend to merge into one incoherent taste and delicate volatile top notes are lost most quickly of all.
